Vegan Roasted Vegetable Pitas

Ingredients

  • 1 zucchini
  • 1 yellow squash
  • 2 cups sliced mushrooms
  • 1/2 red onion
  • 2 tomatoes
  • 5 pita halves (pockets)
  • 2 cups vegan roasted red pepper hummus (search for recipe)
  • 1 tbsp paprika
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 3 tbsp lemon juice
  • 3-4 tbsp olive oil

Cooking Instructions

Cut veggies into about 1/2"-1" cubes. Toss together with olive oil, lemon juice, salt, pepper and paprika.

Spread evenly on baking sheet.

Bake at 450 degrees F for 10 minutes, then stir and bake for another 10 minutes until browned.

Spread each pita half with a generous amount of roasted red pepper hummus. Fill with roasted veggies and serve.
