Wrap tortillas in moist paper towels and then in foil. Place in oven on "Warm" or lowest setting.
Slice bell peppers and onion into long strips. Heat olive oil in large skillet. Add bell peppers, onion, sliced mushrooms, and diced serrano chiles.
Add cumin, salt, pepper, and lime juice. Saute on med-high heat until onions are translucent. Turn heat to low, and simmer 5 mins or so until most liquid is reabsorbed/evaporated.
Smear each tortilla with generous (1-2 tbsp) portion of guacamole. Add veggies and serve.
