Vernae's Pecan Pie

Ingredients

  • 2 Deep-dish pie crusts
  • 6 eggs lightly beaten
  • 1 c. granulated sugar
  • 1/2 c LIGHT brown sugar packed
  • 1 1/2 all purpose flour
  • 1 1/2 margarine or butter softened
  • 1 1/2 LIGHT corn syrup
  • 2 tsp vanilla
  • 2 c. pecans halves or coarsely chopped (your preference)

Cooking Instructions

Preheat oven to 350 degrees. Beat eggs. In a bowl mix white and brown sugars and flour. Add to eggs along with butter syrup and vanilla. Beat until smooth. STIR in pecans. It is best to stir mix with pecans just before pouring into pie shells so that you get a fairly even number of pecans in both pies.

Bake at 350 degrees for 40-45 minutes until set. Do not overcook but watch to be sure it is not jiggling too much. It will be runny if it is. If it is dark enough but still not set turn oven off and leave for 10 minutes or so only.

Recipe Notes

This pecan pie is the best you'll EVER eat! It has light corn syrup and less actual sugar than most others. You'll never try any other recipe.
