Vinogradski (Eggplant-squash Casserole..

Ingredients

  • 1/3 c. olive oil
  • 1 med. eggplant, sliced, with skin
  • 1 med. onion, chopped
  • 1 med. potato, diced
  • 1 med. green pepper, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 zucchini, (6"-8"), chopped
  • cheddar cheese, grated
  • romano cheese, grated
  • parmesan cheese, grated
  • minced fresh or powdered garlic
  • 6 large tomatoes, thickly sliced
  • fine bread crumbs (opt)

Cooking Instructions

Preheat oven to 350 degrees.

large, shallow casserole 9"x13"x2." Oil with some of the olive oil.

Layer into casserole, sprinkling in between layers with each of 3 cheeses (not together) and small amount of seasonings.

Layer the thickly sliced tomatoes on top.

Heap a mixture of the 3 cheeses on top of tomatoes.

Add, the bread crumbs, if using.

Drizzle with remaining olive oil.

Bake @ 350 for 1 hr. or longer.

Let stand 10 min.

(for bulkier dish add 1/3 c. cooked rice).
