Ingredients

  • 3 eggs
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups coarsely grated zucchini
  • 1 tbs cinnamon
  • 2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 cup raisins
  • 1 cup walnuts

Cooking Instructions

Beat eggs until thick and lemon-colored. Add sugar, oil, vanilla and mix. Stir in zucchini.

Add all dry ingredients. Fold in nuts, raisins. Grease two loaf plans, pour in batter.

Bake at 350 for 1 hour, 10 minutes. Cool for 10 minutes in oven, then remove and cool on racks.

recipe missing flour

mad this recipe and added 3 cups flour. lost my original recipe for this bread and this recipe is as close to mine as you can get. i will now put this in with my other recipes.
