Warm Baked Fruit and Honey Compote

Ingredients

  • 1-1/2 cups dried apricots
  • 1/2 cup dried pears
  • 1/4 cup dried cherries
  • 1/4 cup currants
  • Zest of 1 lemon
  • 4 kumquats sliced into rounds
  • 3 tbsp honey
  • 1 cup fresh orange juice
  • 2 tbsp butter

Cooking Instructions

Cover the apricots, pears, and cherries with warm water and set aside to steep for 4 hours or overnight. The next morning, pour off the soaking water and put them in a baking dish with the currants, lemon zest, and kumquats. Mix the honey with the orange juice, pour over the fruits, and dot the top with butter.

Preheat the oven to 375F. Cover and bake for 20 minutes, then remove the cover and continue baking for 15 minutes. Serve warm or at room temperature.
