Warm Noodle Salad

Ingredients

  • 5 strips thin-sliced bacon
  • 3 oz each) any flavor ramen noodle soup mix
  • 12 oz red cabbage, shredded (5 cups)
  • 1 bag (10 oz) spinach, rinsed; tough stems removed; leaves torn bite-size
  • 1 small onion, halved, thinly sliced
  • 1/3 cup red-wine vinegar
  • 2 Tbsp oil
  • 2 tsp Dijon mustard

Cooking Instructions

Cook bacon in a large nonstick skillet about 5 minutes until crisp. Drain on paper towels. Spoon 2 Tbsp drippings into a small bowl; discard the rest.

Meanwhile break each package noodles in 4 sections. Cook as package directs, then drain. Reserve seasoning packets.

Put cabbage, spinach, onion and noodles in a large serving bowl.

Add vinegar, oil and mustard, plus 1⁄4 cup water and contents of 1 seasoning packet to bowl with drippings. Whisk to blend, pour into skillet and heat 1 minute. Pour over salad; toss to mix and coat. Crumble bacon over top.

Serve with ham slices.
