  • 2 egg yolks
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp capers
  • 1 tsp chopped garlic
  • 1/2 tsp Cajun spices
  • 1/2 tsp ground paprika
  • 1 cup corn or canola oil
  • 1/4 cup finely chopped fresh watercress
  • Salt to taste
  • Cayenne pepper to taste

Cooking Instructions

In a medium-sized bowl, mix together the first eight ingredients. Fold in the watercress and add the salt and cayenne pepper.
