Preheat oven to 350F (175C). Lightly grease baking sheets.
In a small bowl, combine flour, salt and soda. In a large bowl, beat together butter and sugar until fluffy. Add eggs and vanilla and beat well. Stir in flour mixture, rolled oats, 1 cup white morsels and nuts. Drop dough, using a cookie scoop or level measuring tablespoonfuls, 2 inches apart on prepared baking sheets.
Bake 12 to 15 minutes or until light golden brown. Let the cookies rest 1 minute on the baking sheets before transferring to wire racks to cool.
If desired, microwave 1/4 cup vanilla morsels in a small heavy-duty plastic bag on high 30 to 45 seconds; knead. Microwave for additional 10 to 20-second intervals, kneading until smooth. Cut a tiny corner from the bag and squeeze the melted morsels to drizzle on cooled cookies.
