Preheat the oven to 350F. In a medium bowl, whisk together the flour, baking soda, and salt; set aside. In a large bowl, with an electric mixer on medium speed, cream the butter, brown sugar, and sugar together. Add the egg and vanilla extract. On low speed, add the flour mixture. By hand, stir in the white chocolate or vanilla milk chips and macadamia nuts.
Drop rounded tablespoonfuls of dough 2 inches apart on ungreased baking sheets. Bake in the center of the oven for about 9 to 12 minutes, or just until set but not browned. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Store in an airtight container. Well-wrapped cookies may be frozen.
