Whole Wheat Pie Crust

Ingredients

  • 1 c. whole wheat flour
  • 1/4 tsp salt
  • 1/4 c. safflower oil
  • 4 tbsp ice water (if available)

Cooking Instructions

1. In a medium-sized bowl, combine flour and salt. Add oil and water and mix lightly with a fork until the pastry leaves the sides of the bowl clean. Knead with hands until the dough holds together into a ball.

2. Roll out into a pie pan-sized circle between 2 pieces of waxed paper and fit into a pie pan. Press and shape the dough into the pie pan and flute to make a scalloped edge. Prick the crust all over with a fork.

3. For quiches, bake the pie crust for 8 minutes at 425 (this prevents it from getting soggy during the further baking of the quiche). If a pre-baked pie shell is required for other recipes, bake at 425 for 15 minutes, or until the pastry is lightly browned.
