1. Place the flour in a medium bowl. Measure the oil and the hot water into a small bowl. Do not mix. Slowly pour the oil and water over the flour, mixing with a fork just enough to form a ball. If you are making a double crust, divide the dough into two portions, one piece slightly larger than the other.
2. Place the larger piece of dough between two sheets of lightly floured waxed paper and roll it out. Lightly sprinkle your work surface with water to keep the paper from slipping.
3. Carefully peel off the top sheet of waxed paper. Pick the dough up by the corners of the bottom paper and place it (paper side up) in the pie pan (a). Carefully peel off the paper (b). Fill the crust with the desired filling and roll out the remaining dough. Cover the pie with the top crust. Flute the edges (c), and cut some holes in the top crust to allow the steam to escape (d). Bake according to the directions given in the filling recipe you choose.
