Ingredients

  • 6 tbsp shortening
  • 1 cup sugar
  • 1 egg
  • 1 cup milk
  • 1 tsp vanilla
  • 2 cups flour
  • 1-1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened cocoa
  • 1 tbsp oil
  • Fluffy Vanilla Filling

Cooking Instructions

1. Preheat the oven to 350. Line a baking sheet with parchment paper.

2. Cream the shortening, sugar, egg, milk, and vanilla together thoroughly in a bowl.

3. Mix the flour, baking soda, salt, cocoa, and oil together in another bowl. Add to the creamed mixture and blend.

4. Drop the batter by spoonfuls onto the prepared baking sheet, spacing them 2-in apart. Bake in 350oven for 8 to 10 minutes, until done. Allow to cool slightly on the baking sheet, and then transfer them to a wire rack to cool.

5. To assemble a "pie," spread some filling on one chocolate cookie, and top with a second cookie. Repeat, using up all the cookies and filling.
