Wilted Dandelion Greens

Ingredients

  • 1/4 tsp dry mustard
  • 3 tbsp mild vinegar
  • 4 strips of bacon, diced
  • 4 cups coarsely shredded dandelion greens
  • Dash of freshly ground pepper
  • 1/2 tsp salt
  • 2 tsp sugar

Cooking Instructions

1 Tough roots or stems should be removed from the greens before shredding them. Place the greens in a large bowl.

2 Cook the bacon until crisp. Add the remaining ingredients to the bacon and fat and heat, stirring, until the sugar has dissolved.

3 Pour the mixture over the dandelion greens and toss well.
