Brown ground beef in a dutch oven or kettle that will easily hold the 2 lbs. of meat. As meat is browning, keep crumbling it so you get a fine texture to your meat mixture. When beef is browned, add taco seasoning and stir until it is evenly distributed through the meat. Add the remaining ingredients up to and including salt and pepper. (the ingredients listed after the salt and pepper are for taco garnish and should be served in serving dishes for guests to top their own tacos.) Stir meat mixture well and heat for at least /2 hour on low heat, stirring often to keep it from sticking to the pan. Heat taco shells and fill.
