1. In a large bowl, combine the fruit and toss gently.
2. In a small bowl, place the cinnamon. Add the juice, slowly at first, to make a paste, then slowly stir in the rest. Add sugar or honey to taste.
3. Pour the dressing over the fruit and toss well. Place in the refrigerator to chill for 2 to 3 hours. Remove and set aside at room temperature for at least 30 minutes; the fruit should not be ice cold.
