Winter Fruit Compote

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium-size onion, chopped (3/4 cup)
  • 2 cups (8 ounces) fresh cranberries
  • 1/2 teaspoon each ground allspice and cinnamon
  • 3 2 x 1/2-inch strips orange peel, removed with a vegetable peeler
  • 1 jar (12 ounces) black currant jelly
  • 1 can (8 ounces) crushed pineapple, drained

Cooking Instructions

Heat oil in a medium-size saucepan over medium heat. Add onions and cook, stirring occasionally until soft, about 8 minutes.

Stir in cranberries, allspice, cinnamon and orange peel. Cook, stirring occasionally, until cranberries pop, about 7 minutes. Add jelly; stir until melted. Stir in pineapple. Serve warm, cold or at room temperature.

Make Ahead: The compote can be made up to 1 week ahead. Let cool, then cover and refrigerate.
