1. Heat the oil in a 12-inch nonstick skillet over medium-high heat. Meanwhile, cut the pork into 1/4-inch-thick slices (some pieces may look more like strips), adding the meat to the skillet as you slice. Cook for about 5 minutes on the first side.
2. While the meat cooks, peel and cut the onion into 1/4-inch slices. Separate the slices into rings and scatter them over the pork. Let cook while you prepare the sauce.
3. Combine the vinegar, hot pepper sauce, and sugar in a 1-cup glass measure. Microwave for 30 seconds on high, then stir to dissolve the sugar. Immediately pour the sauce over the meat and onion rings.
4. Turn the pork slices over and cook just until the pork is cooked through, about 5 minutes more. If the pan becomes dry, lower the heat and add 2 tablespoons water. Season with salt (if using), and serve the meat topped with the onion rings.
