Yankee Corn Bread

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 cup yellow cornmeal
  • 2 eggs, room temperature
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1/3 cup chopped crisp bacon

Cooking Instructions

BAKING PAN

One 9"-x-9" baking pan, greased or Teflon

BY HAND

22 mins.

Sift together the flour, sugar, baking powder, and salt into a medium bowl. Stir in the cornmeal.

In a small bowl beat the eggs with a fork, and add the milk and melted butter. Stir in the bacon bits. Add to the dry ingredients. Mix with a wooden spoon or spatula only to moisten the batter. Don't overstir even if the batter is lumpy.

Pour into the pan and level with the spoon.

PREHEAT

Preheat the oven to 425.

REST

10 mins.

Let the batter rest for 10 minutes while the oven is heating.

BAKING 425

25 mins.

Bake until the bread is raised and golden, about 25 minutes. Test with a wooden toothpick or metal skewer for doneness. Don't overbake or it will be dry.

(If using a convection oven, reduce heat 50.)

FINAL STEP

Remove the bread from the oven. Cut in squares and serve immediately from the pan-with lots of butter!
