Preheat oven to 400 degrees F (200 degrees C).
Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
Bake in preheated oven for 25 minutes, or until lightly browned.

Fallow a recipe, yeah right.Well, it was one of those days. I had a few or several squashs(yellow crook. zucchini,pettis pans) but met the rquired cuppage. The round buttery crackers were stale, imagnine that, but good ole saltines. Then came the cheese, I looked and it was a question .Open and grate or up some of these odds and ends. The odds and ends won out cheddar both white and yellow mild to sharp some even a little mole'd. Some swiss, pepper jack( thats the 2 dogs names also they watch me cook) and a few Itialian cheese and I was set. I now had all the cuppage of ingedents, with the this recipe, I made a great squash casserole. |

Warm taste of summer.This is a great recipe, I've substituted Stove Top Dressing for the crackers. The seasonings in the dressing add a nice Italian flavor. |
