Ingredients

  • 1 Red Bell Pepper, seeded and cut into strips
  • 1 Yellow Bell Pepper, seeded and cut into strips
  • 1 Yellow onion, peeled and sliced
  • 2 Zucchini, sliced diagonally into 1/4 inch slices
  • 2 Yellow squash, sliced into 1/4 inch slices
  • 1 Portabello mushroom, cut into 1/8 inch pieces
  • 2 Roma tomatos, cut into 1/2 inch pieces
  • 3 Tablespoons Olive oil
  • 1 tsp Kosher salt
  • 1/2 tsp fresh ground pepper
  • 1 Tablespoon Dried Italian herbs
  • 1/4 tsp. Red Pepper Flakes
  • 3 Tablespoons Grated parmesan cheese

Cooking Instructions

Heat oil until it shimmers. Add veges and cook until crisp tender. Toss with herbs, salt, pepper and hot pepper flakes. Sprinkle with parmesan cheese before serving.
