Ingredients

  • 3 Eggs
  • 1 cup Oil (Not Olive Oil)
  • 2 cup Sugar
  • 2 cup Grated Zucchini w/ peel
  • 3 tsp Vanilla
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 3 cup Flour
  • 1 cup Copped Nuts (Optional)

Cooking Instructions

Mix oil, eggs, sugar, 1 cp. of flour, salt, & baking soda...Beat well Then add zucchini & 2 cps. flour Mix well Stir in vanilla & nuts. Bake @ 350 degrees for 45 mins to 1 hour.
