Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Zucchini PattiesMy grandson and I had them for lunch with sour cream, I added a few drops of Franks hot sauce to the batter and served them with sour cream. I only wish I had some more Zucchini on hand would make another batch today for lunch. |

Boys enjoyedMy boys would prefer their vegetables not served plain and so they enjoyed these patties. I tried to fry them on a griddle using PAN and that didn't work so well. They need the oil. But they have a nice flavor and I would make again |

LOVED ITI MADE THIS WITH SOME SPICEY PORK TENDERLOIN. I ADDED CHILLI POWDER AND JALEPENO,AND SERVED IT WITH A DOLLIP OF DAISY. KINDA LOOKS LIKE A POTATO CAKE BUT VERY HEALTHY AND TASTE WONDERFUL. |
