Zucchini Patties

Ingredients

  • 2 cups grated zucchini
  • 2 eggs, beaten
  • 1/4 cup chopped onion
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • salt to taste
  • 2 tablespoons vegetable oil

Cooking Instructions

In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.

Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

I loved them!!! so did my family~

They came out great!!!!! but i did change up the recipe a little. I used some crushed ritz crackers and a dash of flower. I also added a mushroom.

Easy and Good

The patties looked just like the picture and tasted really good. We used a mild salsa for extra flavor. I will make this recipe again and will add meat or fish. It truely did not take a ling time to make and it was not hard to assemble the ingredients. Thanks aol for the tip.

Zucchini Patties

My grandson and I had them for lunch with sour cream, I added a few drops of Franks hot sauce to the batter and served them with sour cream. I only wish I had some more Zucchini on hand would make another batch today for lunch.

Boys enjoyed

My boys would prefer their vegetables not served plain and so they enjoyed these patties. I tried to fry them on a griddle using PAN and that didn't work so well. They need the oil. But they have a nice flavor and I would make again

they should call these "zucchini pancakes" they're like potato pancakes, except they're made with zucchini.
