HEAT A SMALL AMOUNT OF OIL IN A SKILLET OVER MEDIUM-HIGH HEAT. DROP ZUCCHINI MIXTURE BY HEAPING TABLESPOONFULS, AND COOK FOR A FEW MINUTES ON EACH SIDE UNTIL GOLDEN

great!I've made zucchini pancakes before, however my recipe doesn't call for the mozzarella cheese. I might try to add a little mozzarella to one and see how they come out. Really something different and delicious. |
