Zucchini Pie

Ingredients

  • 4 C Chopped Zucchini
  • 1 C Chopped Mushrooms
  • 2/3 C Chopped Red Onions
  • 4 Whole Chopped Garlic Cloves
  • 2 Lg Eggs
  • 12 Oz Shredded Mozarella Cheese
  • 1 Can Crescent Rolls
  • 2 Tbsp Olive Oil
  • 3 Tbsp Butter

Cooking Instructions

Preheat oven to 375.

In quiche dish, spread Crescent rolls to make bottom crust, bringing dough up sides. Set aside.

Saute zucchini, onions, garlic, mushrooms until just under firm. Add eggs and stir. Add cheese and stir quickly. Remove from heat.

Pour mixture into pre-prepared quiche pan.

Bake for 20 minutes. Remove and let set for 5 minutes before cutting.
